Meet Brooke: The Woman Behind Bayside Bakery

Teaching herself how to bake when she was just 13-years-old, you would never know Brooke Schultheis’ story of success began with a childhood hobby.

Brooke’s bakery, Bayside Bakery, was established in 2015 and serves the Tampa Bay and Central Florida areas. A 100 percent buttercream shop (as opposed to fondant or gum paste), everything Brooke creates is hand-piped. Her specialties: hand-piped florals and custom-decorated sugar cookies.

If there’s anything you should know about Brooke, it’s that she’s always looking for new ways to surprise and delight her customers. “Anytime I come across something I have never seen before, I immediately want to try it out,” she explained. “I love challenging myself by incorporating new baking techniques and tricks.” The most rewarding part of her job: “the smile and ‘thank you’ I get when I deliver a wedding or special event cake,” Brooke gushed. “It’s incredibly rewarding to be a part of such significant moments in people’s lives.” When asked what her favorite thing is to bake, Brooke replied: “Cupcakes and pastries, because one recipe can be slightly tweaked to create countless new flavors and styles.”

Brooke’s vision for her self-made bakery? To be people’s go-to spot for anything from the simple scratch-made bakery items that comfort your soul in every bite, to the elegant custom-designed cakes and cookies that bring a show-stopping quality to any event.
